Tender, crispy and tasty! Hot Corn Fritters on a cold day!
1 1/2 cup Canola Oil
1 1/2 cup Flour
1 Can Cream of Corn
1/2 Teaspoon Baking Powder
Place a frying pan with Canola Oil on the stove top, set to Medium-High heat. While that's heating up, mix the Flour, Cream of Corn and Baking Powder. The Fritter batter should be the consistency of a very sticky dough. Test your oil with a tiny bit of flour. If the flour starts to simmer then your oil is ready. Use a Tablespoon to measure out dollops of the batter into the frying pan. Leave about 2 inches between each fritter. Check the underside and when it is golden brown, turn over and allow to cook to the same color. Remove and place onto a plate lined with paper towel.
Simple and yummy. They melt in your mouth!
