This blog "River-Rose" has highly been ignored by its writer and with good reason. In October of 2010, her husband was diagnosed with a terminal illness. She has been documenting their struggle with Pulmonary Fibrosis and how a family deals with a terminal illness. The blog she documents this on is called "Breathing". My Grandmother passed away today.

She was the matriarch of our family.

No matter how far we wandered, she was the beautiful glue that held every single one of us together.

She used to love to crochet.

Not the big stitches that make a blanket, but the tiny, little stitches that made the finest lace on handkerchiefs.

She really loved to travel.

She had been to most of the areas in this world. All the way through her life she enjoyed any opportunity for a new experience.

Most of all, she loved her husband, family, and God.

She prayed the rosary for everyone, everyday. She was a faithful woman to all of those things and everyone could always count on her for her prayers.

A couple days before she passed, my Mother asked her what is her favorite of the Commandment's and she said the Second..."Love thy neighbor as thyself."

This was a song she used to sing in the kitchen as she cooked the most delicious meals for all of us and she also sang this song with tears in her eyes the last time that I saw her.

Facinating!

Some of my favorite childhood memories were spent at my Grandmother's house. Where, up the stairs was my Uncle's room, quietly preserved, as he traveled the world. At times, my Sister and I would sneak into his room and- Behold!

A photographic-montage covered every corner of the walls within his room. Beautiful and dreamy pictures of female icons.

Not to mention, books! Lot's of books, about every juicy, documented detail of their lives!

It was fabulous to be a young lady and literally be transported into another world, a place that both strong and fragile women ruled and their beauty, even within the flaws of their lives -were undeniable.

I am glad that I secretly entered his room...-many times. The things I thought about as I looked at the pictures and read their stories have stayed with me to this day, and, as a side note, helped to create the passionate spirit within me.

It's a dirty job but someone's got to do it!

I started composting three years ago because I thought it was a good way to recycle food waste and also get good soil amendment called vermi-compost or worm compost material. The worms turn the scraps and garden waste into a rich form of worm compost through their digestive system. The compost and the compost tea are full of micro-organisms and nutrients.

The compost started out with about 100 worms and now I have so many I would not be able to count them! The worms used are Red Worms: Eisenia Foetida -commonly known as red wiggler, brandling or manure worm. Red worms are the best because they can withstand various conditions.

I feed my worms about once a week. They love coffee grounds most soft vegetable peels and fruit scraps. I usually cut banana peels so they are easier for the worms to digest. They cannot be feed anything acidic such as citrus; lemons, chicken manure, tomatoes and chili. Acidic foods will also unstablize the ph level in your compost. Worms thrive in neutral ph conditions. Another tip, do not include anything that has been cooked or has grease, no meat- this stuff will attractive rodents to your worm compost.

Each worm contains a male and female organ, so any mature worm from the same species can mate. After mating they produce a capsule containing 20 eggs. A mature compost worm might mate every 7-10 days & produce 4-20 capsules per week, but only 3 capsules will hatch with 4 worms inside. Thus producing 12 baby worms, per mature worm, each week!

For the compost tea; simply add 1-2” of compost to your water can and allow compost and water to steep for a day, mixing occasionally. Then use to water plants. This works as fertilizer and insect repellent.

Take care of your worms and they will take care of your garbage and produce compost. You will notice less bedding and more compost in 3-5months after setting up your worm farm. This means it is time to harvest. Harvest means removing the compost from the container. It’s like striking gold! Your plants will be so much healthier and you will not believe the results.

Just because Valentine’s is over, why should the romance end?

My romance with food began as a small child in the kitchen with my Grandmother.

She was a simple woman whose

small abode was always filled with visitors and family.

My favorite place to be was right next to her in the kitchen where,

I became fascinated in the wonder of watching her tiny, well-worn hands delicately prepare exquisite and thoughtful meals.

As she sang songs from her youth she sliced and diced, sautéed and fillet.

Not, until I found myself in the kitchen as an adult did I realize that all of her culinary masterpieces where prepared on a very limited budget. It had never crossed my mind because

every mouthful had been prepared with love.

What is the connection between food and love?

The evidence is all around us.

Remember your first taste of cotton candy at the fair or a romantic candle-lit dinner?

Perhaps even the gallon of Rocky Road ice cream when that date didn’t quite work out?

In food there is a giving and a sharing mixed with a bit of the unknown.

My romance with food and the people with whom I share it is an ongoing adventure in which I will always be opened minded, because I know that when inspired with love- anything is possible!

Molasses-Gingerbread Cake with Mascarpone Cream

Total Time: 1 hr 30 min.

Makes 9 servings

Cake

2 1/4 C all purpose flour

1 ¾ ground ginger

1 t cinnamon

1 ¾ t baking soda

½ t salt

¾ c plus 2 T canola oil

¾ c plus 2 T honey

2 eggs

1 t finely grated lemon zest

¾ boiling water

Orange Confit

1 orange, zest peeled with a vegetable peeler and sliced lengthwise into 1/8 strips

4 Cup water

½ Cup sugar

Mascarpone Cream

1 C mascarpone at room temp

¾ C heavy cream

¾ t finely grated orange zest

2 T confectioners’ sugar

1. Make the cake: preheat the oven to 350. Spray a 9-inch square baking pan with vegetable cooking spray. In a large bowl, combine the flour with the ground ginger, cinnamon, baking soda and salt. In a medium bowl, whisk the canola oil with the brown sugar, molasses, honey, eggs and lemon zest until smooth. Whisk the wet ingredients into the dry ingredients until combined. Whisk in the boiling water. Scrape the batter into the prepared pan and bake for about 1 hour and 10 minutes, until a cake tester comes out clean or a toothpick. Let cake rest on a rack for about 2 hours.

2. Make the orange confit: In a medium saucepan, combine the strips of orange zest with the water and sugar. Bring to a boil and cook over high heat until syrupy and the orange zest is soft, about 30 minutes. Using a slotted spoon, transfer to a plate, discard the syrup or use as simple syrup for a cocktail.

3. Make the mascarpone cream: In a large bowl, using an electric mixer at med speed, beat the mascarpone with the cream, orange zest, confectioner’s sugar and salt until soft peaks form.

4. Cut the molasses cake into squares and transfer to a plate. Dollop with the cream on top and garnish with the orange confit.

The cake will keep for 2 days at room temperature wrapped in plastic wrap. The orange confit will keep for 3 days airtight at room temp.

Easy Butternut Squash Ravioli

This yummy dish is made from leftover Butternut Squash and just bursts with the taste of Autumn!

You will need:

1 cup cooked Butternut Squash

1 cup Ricotta Cheese

1/4 cup grated Parmesan

1 package Won-Ton Wrappers

1 small bowl of Water

1 jar Alfredo or Marinara Sauce

First, place the Alfredo Sauce into a pan set at medium-low heat. While that is warming up, in a mixing bowl add the Butternut Squash, Ricotta Cheese and Parmesan. Combine ingredients well. Next fill a small bowl of water and get your wonton wrappers ready to fill. Don't forget to stir your sauce. Take a wrapper into the palm of your hand and dip your finger into the bowl of water. Run your finger along the outside edge of the wrapper. Then place a teaspoon of the mixture into the center of the wrapper.

Fold the wrapper so that all edges are sealed. Place Ravioli into the simmering sauce and gently stir. Allow to cook for 5 minutes. This recipe makes about 1 dozen.

Werewolf's Halloween Dilemma

This year, Werewolf was in a bit of a dilemma about his favorite holiday, Halloween. You see, this year it fell on a Sunday and Werewolf wasn't sure if his monster friends would celebrate it on Saturday instead.

The black cats were out and it was a lovely night.

Werewolf had a sweet tooth and couldn't stop thinking about the candy! He had to know when people were going to celebrate Halloween!

So he consulted the Spooky Head Candy Holder, but someone forgot to replace it's batteries and he got no reply!

He thought he might read a bit, but found no clues in his favorite book.

That's when he thought to give his friend a call, but his friend said that according to newspaper it was unclear and he, too, was confused.

Arrrrgh! Besides nights with full moons, Werewolf was usually a calm person, but this was making his blood boil! That's when he got an idea to take his mind off of it and make some homemade chili.

A can of Pinto Beans, a can of Kidney Beans, some Stewed Tomatoes, Corn, Onion, Mushrooms, Garlic and a few seasonings all went into the pot and set to a slow simmer.

Then, he thought, "What the heck, I may as well pull out the Cinnamon Rolls."

Werewolf then decided to calm himself with a nice cup of Chamomile Tea!

Soon, there was a knock at the door. His buddies smelled the Chili and Cinnamon Rolls miles away! With good food and friends, it's always a celebration, and that's how Werewolf and his friends celebrated Halloween!

The Beatles is my all time favorite band. I grew up listening to their music as a child and my first album was actually their second album released. I can't believe I still have this album, yet, no record player anymore! I loved the songs on this album and, as you can tell, I wore it out.

Their music addressed every stage of my life and I cannot imagine music existing without their contribution.

Now it's stuck in the faucet.

Evening going, not, like it was supposed to go.

Live to Ride- Sturgis, South Dakota

A couple weeks ago my hubby and I were on the big-rig headed to deliver a load in Minnesota. As soon as we hit South Dakota we noticed some motorcyclists on the road.

Traveling in the same direction as we were.

One- after another,

after another.

Soon enough, we were surrounded by hundreds of gorgeous Harleys and that's when we realized that we were headed straight for the famed Sturgis bike rally. It was the 70th anniversary for the bike rally and the closer we got, the more cyclists.

Although my husband and I have been Harley enthusiasts and have owned a 1978 Harley Sportster named Sally, we have never been to Sturgis- but always dreamed of going. Well this, apparently was our lucky day. I would have never imagined the magnitude of the event and how many thousands of people and awesome bikes we would see! How lucky can a girl get?

It reminded me of a funny email that I once received:

I've mentioned earlier that I was off on a vacation. This does not mean that I was zipping down a water slide or having my toenails painted at a spa (I wish). Instead, myself and two dogs hop on a big-rig truck with my husband and spend some precious time together while he's working.

Over a ten-day period we were dispatched on a series of loads that started in Twin Falls, Idaho, out to Green River, Wyoming, down to Grandview, Missouri, back to Grand Island, Nebraska, and across to Fostoria, Ohio, back to Missouri, and then all the way home again.

It takes a patient man to take on the challenge of spending 10 days in a truck with his wife, a Chihuahua, and Pug, in such a small space.

My hubby pulled through and we had a wonderful time, even though sometimes it felt as though we were driving in circles!

Turned to the Right

It's been a long time that anyone has turned me to the right.

I have let the key turn to any soul who was a friend of this house.

Your Grandfather turned me every night after a long days work.

On the other side were smells of delicious stews, simmering over the fire as your Grandmother hummed a melancholy song while sitting her chair knitting. Your Mother, as a child; played, laughed, read, and grew.

For a while, I was turned to the left and left I was- to be still. All around the grass grew, taller even than the front steps. The oak grew grandly and towers over this small abode. But, I am glad you are here and even though I am slightly resisting your key, it is just to hold onto the moment a little longer.

What do cowboys wear when going swimming?

At the beginning of summer, I checked out a few movies at the library. One of which was The Best of Bonanza. Thirty-four episodes of a beloved western that I remember watching as a kid. I thought maybe during a few of the long summer days, my ten-year old might enjoy discovering the show.

Little did I know that my son would soon become so absorbed in the Bonanza episodes and life at the Ponderosa Ranch, that it would cause substantial late fees at the library!

Soon, my son was decked out in cowboy hats, jeans, bandannas, long sleeve shirts, vests, and of course, boots. Since we live in Idaho where many a true cowboy wander, it's not as though my son stood out wearing these outfits about town!

His favorite character is "Little Joe" played by Michael Landon. But, hey- it's summer at River-Rose. Lot's of swimming and gardening to be done.

I'd beg him, "Please change out of the cowboy stuff-it's 90 degrees outside."

"I don't see Little Joe in sandals and shorts.", he would respond.

Now, I'm on the hunt for some Kenny Chesney videos, so he can see how a modern day cowboy can hang at the beach!

I am writing from China, and in fact, blogspot is banned here (because of Communist restrictions) so it was not with a little trouble that I had to sign in with a proxy server to leave this comment. My photobook was actually published in 2008 in Hong Kong, but has taken over 2 years for it to reach the bookstores of America as well as Amazon.com. I often joke that I am not sure which has been more challenging: traveling across China, or publishing a book about it. Anyhow, I am just grateful that it is finally being seen by a western audience, and I hope you all will enjoy the photographs therein. Many thanks for taking the time to write this review!

China: Portrait of a People by Tom Carter

If more than texture, color, and vibrancy can be captured in a photo, China: Portrait of a People written by Tom Carter has done just that. Just by opening the book one is immediately transported to the many beautiful areas and people who live within the region. One can completely imagine standing in the same spot as Carter was when he took these photos.

It's as though I have traveled there, although it is only a place that I have dreamed of going. If I were lucky enough to go to China, this book would be tucked snugly within my suitcase, or in Tom Carter's case- backpack! I think that is what sets this book apart from others is that the author literally backpacked across the region and to some extent, risked his life so that we may see China through his eyes.

Through his lens, we can share in the subtleties of living within lush farm land and the contrast of the chaotic organization of a city under neon lights.

The people- small children with the softest skin to the most weathered of all workers, Carter shows us more than just color and texture, he lends us a deeper glimpse to the many sides of China as well as human nature!

This is the first year that my son played in a little league baseball team.

Their team did not make it through the play-offs, nevertheless, it was a very exciting experience for both him and myself.

Evenings spent eating snow cones and sunflowers seeds while cheering for our team.

Local business sponsor each team, so, when my mom asked my son what the name of his team was- she was thinking it would be something cool like, the Tigers, or the Cubs.

My son was sure to set her straight and let her know that the name of his team was State Farm Insurance! "State Farm Insurance?", she asked incredulously.

Yep! That's the name of his team.

I'll tell you what, I have never been so excited about insurance before.

Sitting on the sidelines yelling with all my heart, "Go State Farm Insurance!"

While other fans cheered in earnest for The Sprinkler Shop, CK Window Cleaning, or Swensen MD, just to name a few. I guess it's not the name of a team that makes it cool, it's the players!

For vegetarians, they have a wonderful entree, Braised Tofu with Tender Green that comes with little sauteed baby Bok Choy that is so fresh and delicious for $6.99.

If you enjoy shrimp then, oh baby, this dish is for you! The Prawns with Honey Glazed walnuts are out of this world. The shrimp is coated with a slight crust that is infused with honey and the walnuts are toasted and crunchy, for $12.99.

The service is impeccable. One of my dining companions dropped their chopsticks and was going to call out to the waitress, but I told them to wait and I would just simply finish the water in my glass. Sure enough, as I finished the glass, the waitress was there in a heartbeat to refill it. If you are in the Salt Lake area please check it out!

Sweet and Savory Apple Pie!

In honor of Father's Day, here is an interesting recipe that features bacon in a dessert- submitted by Tex-Mex!

Everyone Loves Bacon Apple Pie!

1 Pie Crust

3 Strips Bacon, fried crispy and chopped (I used maple bacon)

6-7 medium to large tart apples, peeled, cored and sliced (I used acombination of granny smith and fuji)

1/4 cup dark brown sugar

1/2 tsp nutmeg

1/4 tsp cloves

2 Tbsp plus 1 tsp cornstarch

1 Tbsp Amareto

1/2 cup REAL maple syrup

6-7 slices bacon, halved lengthwise

Preheat the oven to 350 F. Spread the pie crust in a 9″ pie pan and leave the overhanging edges. Sprinkle the bacon crumbles over the crust. Mix together the apple slices, brown sugar, nutmeg, cloves, cornstarch and Amareto. Spread over the bacon in the pie crust. Pour the maple syrup evenly over the apples. Arrange the strips of bacon over the top of the pie crust in a lattice, then fold the edges of the pie crust over the bacon and crimp. I used a pie crust over the bacon. Bake for 45 minutes or until done.

The perfect mixture of sweet and savory! Enjoy!

Campos Market is a Mexican store located on the Rupert Square in Rupert, Idaho. The square is built around a park and many events are held there during the year. On Friday nights, the market fries up fresh chicharonnes, or pork rinds, and the smell waifs out the door, past the man selling roasted sweet corn, and out, into the square. The smell is alluring when your hungry. At the back of the market is a small restaurant with just about five booths. I ordered three tacos for $1.00 a piece. The waitress asked me what type of meat I'd like. She indicated the beef and the beef tongue were very popular. I have never tried tongue before, but have tried many things. Being a fan of the Food Network, I have seen many a chef say that while greatly underused in the States, it is a wonderful piece of meat and tastes like a very tender steak. So I ordered one tongue taco and two beef.

To ease my nerves the waitress brought out complimentary chicharonnes, still snapping and hot. They were really delicious and so different from what one would find at a convenience store. Fresh, chewy and yummy!

Okay, so here goes... my first tongue taco. It was very flavorful especially with a kick from the spicy green salsa and a squeeze of the lime. The texture is something that may take some getting used to and strangely reminded me of kissing an ex-boyfriend. Nevertheless, I was glad that I gave it a shot and can cross that one off of my "to do" list. I probably would not order the tongue again, although would definitely have tacos at the market again. More like street food than a restaurant, Campos Market's tacos pack a big flavor punch! Simple, satisfying, a little adventurous, and tasty!

Relay for Life!

A few days ago, I had the opportunity to go to the Relay for Life. This is the American Cancer Society's largest fundraiser and proceeds go to the development of medications to manage cancer as well as finding a cure.

The woman in this picture is a breast cancer survivor and said the experience has taught her that she is a strong person. She recommended the book "I Put the Can in Cancer", written by Imogen Gough.

There are many people who have survived cancer or whose lives have been affected by loved ones lost from cancer. Each story is truly heroic.

Inner strength and positive thinking is a precious commodity.

Taking a moment to think about those who lost their fight against the disease.

Celebrating "birthdays" of those who have survived!

For such a pint-sized pup, she is quite the handful and has already instigated a few shenanigans around River-Rose. Yesterday, she got her head stuck in her food bowl and earlier today fell asleep with one eye open which was really freaking me out!

On the bright side, she is very much a sweet cuddler! My favorite kind!

When I first met Jade I was dreaming. I had recently discovered fly-fishing, up in the Wasatch Mountains. I developed such a passion for it that I spent much of my time up in the mountains. Me, myself, and an old Ford F150. There, I discovered that I was capable. But, I found myself imagining, what would it be like to have a companion up here in the hills? That is where I found myself answering an ad in the paper about black lab mixed pups. Suddenly I found myself sitting on the floor with 6 or 7 puppies. Chewing on my tennis shoe laces, progressing puppy escapades unfolded right before me as I observed them all and wondered which one would end up being by my side. Towards the end, when it came time to choose one, I realized that the one that had been sleeping in my lap the whole time had already chosen me. From that day on, she has left an imprint on my heart.

Now that I look back, I realize, I was just a spring chicken myself. Lot's of life still to be lived and a some mistakes to be made here and there. Along the way, mistakes do not matter much when there is a great companion sharing in the journey. She not only stood beside me through pregnancy, moves, and divorce, but actually took an active roll to improve my quality of life in the process. Her great attitude rubbed off on me.

Some people say, "Oh, don't call my dog a dog, they are more like a human!"

Through knowing Jade, I have to say perhaps calling a dog a human, might actually be an insult to the dog. Animals have such wonderful qualities that we can learn from. In my life, I could only hope to develop into such a wonderful being as she.

Thank You, Jade! I'm so proud you chose me and that I was able to experience caring for you from the beginning of your life to the end. If we ever meet again, I'll know I'm in the right place...

How far is Heaven?

As I have written in a prior post, my best friend, Jade, is now 13 years old and not in the best condition. Having lost her sight and being of an elderly age, she is only what I would describe as "tired". Next week, we have an appointment for her spirit to depart from her body and soar straight to Heaven. In other words, she is going to be laid down. There has not been an area I that can point to that brought me to this difficult decision, accept, as her best friend, something just tells me it's time. I realize that for her age and health problems, things aren't going to get much better and believe that, for her, it would be best that she leaves this world before she is in serious pain. As I have been preparing her with what is going to come, I realize that I am probably the least prepared between the two of us. It would be good for me to express some of the wonderful qualities I have experienced through knowing Jade...

Devotion, Laughter, Patience, Security, Sweetness, Strength, Understanding, Adventure, Wisdom, Blessing, Helpful, Protection, Comfort, Compassion, Maternal, Bravery, Determination, Destiny, Loyal, Happiness, Partnership, Dependability, Contentment, Humble, Warmth, Nurturing, and most of all, Love.

This yard, home, family, and heart will never be the same without her, yet, as I told her last night, there are so many ways she will be with me. With every breeze that blows through a field of wheat grass, a glassy lake tucked in the pines, a short stroll to the garden, a fishing pole on the dock, when the sun rises and sets--- she will be with me and always living within my thoughts.

Since it is spring, I thought it would be time to buy my little boy new shoes. Imagine my surprise when the type he described for his wish list were Converse High Tops. Those were all the rage in my school back in the 80's! While there are only a few stores in our town that sells shoes, I knew the pair he wanted would be found at a little mom and pop store that know how to do it "old school".

We hopped into the car and drove to The Stockroom found in Rupert Square. This family owned business has many retro styles, from High Tops to Vans.

They had so many retro styles that I was filled with urges to buy myself a pair, put on a cut up, neon, T-shirt and dance around listening to Billy Idol or Madonna. But, alas, I am a mom now, so I showed some restraint. It was like walking down memory lane and put a smile on my face to see those high tops on my boys feet as he ran down the sidewalk ahead of me.

My favorite part of the book's introduction is this," A true home is a place with heart; it is even more so when we share our home with a loved one. When we are two, a dwelling embodies the spirit of that union- It is a place that offers warmth, comfort, and nurturing.

I aim for that essence in our home for my husband, myself, and our sweet dog, Princess Nikki.
The lovely photos in this book do not showcase the latest upscale furnishings, kitchen designs, etc. What it does show is an eclectic balance between the old and and new, mixed with simple and elegant arrangements throughout the home. An old armchair with some wear and tear becomes lovely again with a new throw, a rugged, unpainted farm table in a small kitchen looks quite charming along with the latest stainless steel refrigerator. This combination speaks volumes to me personally, I also treasured the old with the new and in our throw away society, I believe we should creatively look for 'new' uses in aged or slightly worn items within the home before we replace them. This is where, I believe, the warmth, comfort, and nurturing of the home begins and the true nesting spirit of the home emerges!

The Pie Hole is a recent addition to the Pocatello, Idaho, restaurant scene. Located on Center Street, you can't miss it as long as you look for the artful graffiti that adorns the exterior of the building.

Catering to the college crowd, the Pie Hole sells big slices of New York style pizza. A chewy, thin crust that one can fold over, topped with items such as Basil and Roasted Red Pepper, Potato and Bacon, and Pepperoni.

Pizza by the slice ranges in price from $1.89- $2.36, and makes enjoying a slice easy on your pocket book.

If you are interested in a whole pie and something a little different, try the Thai Chicken which is topped with Thai Peanut Sauce, Chicken, Cilantro, and Green Onions- which will run you $16.65 for a large.

The interior is colorful with lively decorating such as skateboards used for booth seating and the graffiti art on the walls is truly unique. Music, such as the Stones or Red Hot Chili Peppers, will keep your toes tapping while you wait for your slice.

They are open until 2:00 a.m., Monday through Wednesday and until 3:00 a.m., Thursday through Saturday. So, if you get a late night craving to stuff your pie hole, then you know where to go!

Sweet Rides! Fort Hall Replica- Pocatello, Idaho

The Fort Hall Replica, located in Pocatello, Idaho, was modeled after Fort Hall, a trading post that was once known as the gateway to the Pacific North West. They recently celebrated their re-opening with a rockin' car show!

River-Rose contributor "Tex Mex" weighs in on the great barbecue debate - to Marinate or Dry Rub?

Now that you are ready to fire up the smoker how are you going to prepare the meats? If you ask ten people, half will say a dry rub is the way to go, the other half will side with wet (marinade and mop). Both are great, although it truly depends on your taste buds and desired end result.

Dry rubs are very effective, but first one must find the perfect combination of spices to create a delicious rub. Once found, it will become a long standing favorite for that low and slow chef. Commercial rubs can be found at many food stores, although true rub aficionados like to experiment and mix their own. This can be very expensive and time consuming. Once a chef finds that “special rub”, there is no way the recipe will be revealed! It is a winning rub that will get you noticed at BBQ events and once you find one for Brisket, then it's back to the drawing board to find one for the Pork Butt, then Chicken and Ribs. Unfortunately, one rub for all the meats has not been discovered, yet.

Generally, a combination of several spices will be found within a rub. Garlic powder, Paprika, Chili powder, Salt, Pepper, Cayenne, Brown Sugar, Cinnamon, Cumin, Oregano, and Dry Mustard may be in the ingredients. The proportion of each ingredient is up to the person making the mix. Use all those spices, just three, or use five of them- therein lies the secret! Once you have the “MIX” you desire, apply it to the meat it was intended for. Some people coat the meat with a light coat of mustard before applying the rub. You will not taste the mustard once the meat is cooked. Mustard will help adhere the rub to the meat.

Now you will find out why it is called a rub. Coat the meat entirely with the rub then massage it slowly into the meat. Wrap it in Saran wrap and place it in the fridge for six to eight hours- overnight is better.

Finally the meat is ready to cook, is the pit up to 185- 225 degrees?
Put it on and sit back and enjoy, you have already chosen the wood to smoke with right?

Iceberg Lettuce Wedges!

Create your own masterpiece using refreshing Iceberg Lettuce Wedges that are so easy to make!

Ingredients:

1 Quartered Head Iceberg Lettuce

1/2 Cup Favorite Dressing

1 Can Tuna

1/4 Cup Chopped Roasted Red Pepper

A Sprinkle of Black Pepper

Peel away the first layer of lettuce and divide the head into fourths. Drizzle on your favorite dressing and a spoonful of Tuna. Garnish with Roasted Red Pepper and a bit of Black Pepper.

Yummy and a tiny bit messy to eat, although well worth it. There are many variations as the wedges can be topped with anything you love from Guacamole and Salsa, Cucumber Dressing with Blue Cheese and Walnuts, to Pesto and shaved Parmesan!

Real BBQ is low and slow cooking. Smoking the meats to perfection takes time. Choosing the right woods to use is a personal choice. Mesquite, Hickory, Apple, Oak, Cherry, and Alder, are a few of the most popular. Some cooks use a combination of woods to get the desired flavor.

To achieve the great taste of BBQ the meats must be cooked at a low temperature and most choose to cook at 225-245 degrees. Smoker and meat thermometers are a must!!

Some meats such as chicken & ribs can be done in 4-6 hours , while Beef Briskets and Pork Butts will require 16-18 hours to cook. A constant temperature must be maintained while smoking, ( remember16-18 hrs ) also the meat temps must reached 200-210 degrees for Pork Butts (internal).

Briskets can be pulled at the 170-200 degree range and then let rest for 1-2 hours wrapped in foil and left in an ice-chest. Chicken should be cooked to at least 150-165 degrees to insure it is cooked.

One is a Weber model and it is very popular and easy to use, then a Vault and then the more popular; Off-Set, with the firebox on one side and the grill on the other, this is called indirect heat cooking.......... Today, my eldest son turns 16! You can then imagine my surprise when I realized that he just recently "de-friended" me on Facebook. Now, why would a kid possibly do that to his mom on his birthday?

Apparently, he was afraid she would wish him happy birthday in front of 116 of his closest teenage Facebook friends. I guess he forgot about my blog (by the way, he's the cute one in the middle of the card).

Got Milk?

There's nothing like milk!

Whether enjoying an ice-cold glass or using it in a favorite recipe, there are just so many different uses for the creamy white stuff!

My 10 year old son has been reading a book that mentions a character drinking a cup of warm milk and asked me to make him some before bedtime.

I poured about a cup and stuck it in the microwave to heat it. It only took about a minute and a half and I kept close watch on it so that it didn't get too hot and overflow. Once it was heated, I stirred in a teaspoon of sugar and sprinkled a dash of Cinnamon over the top.

My son, who was already tucked into bed, tried it. He took one, tiny, little sip and closed his eyes.

I asked him if something was wrong and he said, "It's good, but the book was right, it just made me really sleepy".

Cayenne Pepper Shrimp and Honey Mustard Salad

Plump, juicy shrimp with a kick, served on a refreshing honey mustard salad!

Ingredients:

(Shrimp)

1 Dozen Cleaned Medium Shrimp

2 Tablespoons Olive Oil

1 Tablespoon Cayenne Pepper

1 Teaspoon Crushed Garlic

2 Tablespoon Soy Sauce

A Sprinkle of Black Pepper

(Salad)

2 Romaine Lettuce Heads

1 Roasted Red Pepper (jar)

1/4 Cup Thinly Sliced Red Onion

1/2 Cup Peeled and Sliced Navel Orange

(Honey Mustard Dressing)

2 Tablespoon Brown Mustard

1 Tablespoon Honey

1 Tablespoon Mayo

2 Teaspoon Rice Vinegar

3 Tablespoon Olive Oil

A sprinkle of Beaumonde

Directions:

Salad: Chop your cleaned Romaine lettuce leaves and place into a bowl. Slice your roasted red pepper, onion and orange and add them to the lettuce. Refrigerate until ready to use.

Dressing: Mix all of the ingredients well. Set aside until the shrimp is done and drizzle over the salad prior to serving.

Shrimp: Heat up a wok with olive oil on high heat. In a bowl, toss the shrimp with the Cayenne pepper, crushed garlic, soy sauce and black pepper and mix. Place shrimp into the wok (careful) and stir. Allow the shrimp to turn pink on both sides and cook for an addition 2-3 minutes and remove from heat. Serve shrimp warm on the bed of salad. Enjoy!

When a young lady of 17 asked me to be her hostess mom for a local Young Junior Miss Pageant, it was one of those things that before finding out what it really meant, my answer was yes.

I had known her since she was three years old and watched her grow all the while.

Not one for knowing much about pageants, I asked her, "What is it that you want to achieve?"

She is a petite thing, dare I say under 5 feet tall, and does not find herself in full blown hair or make up as often as she finds herself in tee-shirts, behind the lens of a camera-- photography is her passion.

"To find my voice." She replied.

How perceptive of her it is to realize this at such a young age.

This has been a process that we have found ourselves a bit out of our element, but the importance of her finding her voice kept us both grounded. She seems to shine in her individuality and is determined to be comfortable with herself, irregardless of what is going on around her.

All I know is I am here to provide support.

The best outcome of next week's pageant would be that decades later, she can go to her photo album, pull out the picture of herself in a gown, and recall on the experience with a grin.

I have been working on this blanket for the past year.

It sits on a wooden box in my room and taunts me, "Put me over your lap and pick up the needle!"

Meanwhile, ever so slightly peeking from behind my headboard is a sketch, waiting to be painted.

"Sit down with me and bring the watercolors", says the painting.

Then, on a desk in another room sits a tax form, and it snickers, "You know your spending the weekend with me!"

Breaking Bread

Today, I made my first "No Knead" bread. It was definitely an experience that involved all of my senses. Smelling it while it was in the oven. Hearing, my tummy grumble in anticipation. Seeing the beautiful loaf for the first time. Touching a warm piece in my hands and finally tasting it. I loved the experience and hope you will, too!

The day before you plan on making the bread, stir together the ingredients:

3 Cups of Flour

1 1/2 Teaspoon of Salt

1/4 Teaspoon of Fast Activating Yeast

1 1/2 Cups of Water

Mix all ingredients well and allow to sit overnight or for approximately 18 hours. After the time is up, tear off a sheet of parchment paper and lightly dust it with flour. Remove the dough from the bowl and place onto the paper. Gently mold into a desired shape and dust with flour. Allow to sit on the counter for an additional hour.

Preheat your oven to 450 degrees. Also, preheat an empty baking dish that has a lid (I used a small Dutch Oven). Once it is preheated, transport the dough by using the parchment sheet and fold over the dough into your hot baking dish. Cover and bake for 30 minutes. After 30 minutes, remove the lid and allow the bread to brown for an additional 10-15 minutes. Remove from oven and allow the bread to cool for one hour (if you can wait that long).

My son's 10th birthday is on April 1st. The problem with having a birthday on April Fool's Day is that no body believes it's your birthday! At school he tried to warn his teacher that it was his birthday, but she argued that he was just playing tricks. He tried to convince her and they bantered back and forth for a bit.

Finally, still not believing him, she said, "I'll tell you what, we will check it together on the computer. If it isn't truly your birthday, then you will have extra homework. If it is, indeed, your birthday then you will recieve a get out of homework pass".

Sure enough, they looked on the computer and she found that it was his actual birthday. No homework!

I told my son that perhaps in the future he should carry around a note from his Mom confirming it is indeed his birthday to those who doubt. Of course, at the ripe age of 10, he just said, "Mom, that would be even more embarrassing!" I guess I would have to agree!
